The Mountfield Way

We produce low quantities of first class sparkling wines in an artisan way. The vineyard has 5,000 vines of chardonnay, pinot noir and pinot meunier which is small enough that we can look after every plant carefully throughout the season.

Canopy management is our primary tool for quality fruit production. It is labour intensive but ensures we get the best possible fruit quality year after year.

From Vine to Press

Harvest Time

We can press our grapes immediately after picking to preserve quality. Our production involves fermenting in both stainless steel and oak barrels for added complexity.

We blend wines from previous years and age wines long-term on lees to develop richness and depth. Our aim is to build a library of mature sparkling wines.
